About Chef German

German’s culinary journey began in Honduras, surrounded by fresh ingredients that unknowingly trained his palate from a young age. After moving to the United States with the dream of becoming a DJ, he took a job as a dishwasher at Santo Pietro in Bel Air. It wasn’t long before the energy of the kitchen and the joy of diners drew him into the world of cooking. With dedication, he worked his way up, learning Italian cuisine at renowned restaurants like Posto in Los Angeles and Valentino in Las Vegas. His passion for Italian flavors and creativity in the kitchen led him to work alongside top chefs, cooking for high-profile events like The Grammys and Oscars. His restaurant, Aromi Las Vegas, has been a major success in Las Vegas. Now, after more than 30 years of perfecting his craft, German brings his love for Italian cooking to Vino Aromi, his second restaurant. Here, diners can enjoy authentic Italian dishes crafted with passion, creativity, and his signature flair.

When people tell me they loved the tasting menu, to me it’s like a "green light,” Castellanos says. “Everyone wants to be surprised during their meal, and I love doing that.”
